  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 23 medium bananas)
  • 1/2 cup sour cream
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Mash the ripe bananas and mix them with the sour cream.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the banana mixture, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  7. In a separate small bowl, beat the softened cream cheese with the powdered sugar until smooth.
  8. Spoon about two-thirds of the banana muffin batter into the prepared muffin cups.
  9. Add a dollop of the cream cheese mixture to the center of each muffin cup.
  10. Top with the remaining banana muffin batter, ensuring the cream cheese is mostly covered. You can swirl the cream cheese mixture into the batter with a toothpick for a cream cheese swirl effect in your banana cream cheese muffins.
  11. Bake for 18-22 minutes, or until a toothpick inserted into the center of the banana muffins comes out clean.
  12. Let the banana muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
