- 1 pound boneless, skinless chicken breasts
- 1/2 cup balsamic vinegar
- 1/2 cup dried figs, chopped
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Pat the chicken breasts dry and season with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes per side, or until golden brown.
- In a small saucepan, combine the balsamic vinegar, chopped figs, brown sugar, and garlic. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until the sauce thickens.
- Add the cooked chicken to the balsamic fig sauce and turn to coat the chicken evenly. Simmer for an additional 2-3 minutes, until the chicken is fully cooked through.
- Sprinkle the chicken with the dried thyme and serve immediately.
