  • ¼ cup milk
  • ¼ cup vegetable oil
  • ½ cup brown sugar
  • 1 cup all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ¼ teaspoon nutmeg
  • ⅓ cup granulated sugar (for coating)
  • 2 tablespoons melted butter (for coating)
  • 1 teaspoon cinnamon (for coating)

Instructions

  1. Preheat your oven to 350ºF. Spray your donut pan with non-stick cooking spray.
  2. In a medium bowl, whisk together the pumpkin puree, brown sugar, vegetable oil, and milk until smooth.
  3. In another bowl, combine the flour, baking powder, pumpkin pie spice, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing gently with a spatula until just combined.
  5. Transfer the batter into a piping bag or a ziplock bag with one corner cut off. Pipe the batter into each cavity of the donut pan, filling them evenly.
  6. Bake in the preheated oven for 15-16 minutes. Check doneness by inserting a toothpick; it should come out clean.
  7. Allow donuts to cool in the pan for 10 minutes before flipping them onto a cooling rack.
  8. Melt 2 tablespoons of butter. Brush each side of the cooled donuts with melted butter.
  9. In a small bowl, combine the granulated sugar and cinnamon. Roll each donut in this mixture until well coated on both sides.
