Ingredients

- 8–10 small flour or corn tortillas
- 6 large eggs
- 1 cup (120 ml) milk or cream
- 1 cup (100 g) shredded cheddar or Mexican blend cheese
- ¾ cup (100 g) cooked turkey sausage or turkey bacon pieces
- ½ cup (70 g) diced onion
- ½ cup (70 g) diced bell pepper
- 2 tablespoons butter or oil
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- Salt and pepper, to taste
- Fresh cilantro or green onions, chopped (optional)
- Add black or pinto beans
- Use chicken sausage instead of turkey sausage
- Add spinach, tomatoes, or mushrooms
- Use pepper jack cheese for extra spice
- Swap tortillas for whole-wheat or low-carb wraps
- Add avocado slices or sour cream before serving
Instructions
- Heat a skillet with butter or oil. Sauté onion and bell pepper for 3–4 minutes. In a bowl, whisk eggs, milk, garlic powder, paprika, salt, and pepper. Add to skillet and cook until soft-scrambled.
- Stir cooked pieces into the eggs and remove from heat.
- Preheat oven to 400°F (200°C). Place tortillas on a lined baking sheet. Spoon filling into each tortilla and top with cheese.
- Fold tortillas slightly and bake 10–12 minutes until crisp. Broil 1–2 minutes for extra crunch.
- Garnish with cilantro or green onions. Serve with salsa, avocado, or pico de gallo.
