Description

No-Bake Dragon Fruit Mini Cheesecakes are vibrant, creamy, and bursting with tropical flavor.


Ingredients

  • 1 cup graham cracker crumbs (or digestive biscuits)
  • 2 tablespoons brown sugar (optional)
  • 4 tablespoons melted butter
  • 1 cup cream cheese, softened
  • 1/2 cup Greek yogurt or sour cream
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup dragon fruit purée (fresh or thawed from frozen)
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons powdered gelatin (or agar-agar for vegetarian version)
  • 2 tablespoons warm water
  • Sliced dragon fruit
  • Whipped cream
  • Mint leaves
  • Coconut flakes
  • Chia seeds or edible flowers

Instructions

  1. Mix crumbs, melted butter, and brown sugar. Press into lined muffin tin or molds and chill.
  2. Sprinkle gelatin over warm water; let bloom 5 minutes, then dissolve gently and cool slightly.
  3. Beat cream cheese, yogurt (or sour cream), sugar, vanilla, and lemon juice until smooth.
  4. Mix in dragon fruit purée until fully incorporated and vibrant.
  5. Add cooled gelatin to the mixture and blend evenly.
  6. Spoon filling over crusts, smooth tops, and refrigerate at least 4 hours or overnight.
  7. Unmold, add toppings, and serve chilled.
