- 1/2 cup dragon fruit purée (fresh or thawed from frozen)
- 1 tablespoon lemon juice
- 1 1/2 teaspoons powdered gelatin (or agar-agar for vegetarian version)
- 2 tablespoons warm water
- Sliced dragon fruit
- Whipped cream
- Mint leaves
- Coconut flakes
- Chia seeds or edible flowers
Instructions
- Mix crumbs, melted butter, and brown sugar. Press into lined muffin tin or molds and chill.
- Sprinkle gelatin over warm water; let bloom 5 minutes, then dissolve gently and cool slightly.
- Beat cream cheese, yogurt (or sour cream), sugar, vanilla, and lemon juice until smooth.
- Mix in dragon fruit purée until fully incorporated and vibrant.
- Add cooled gelatin to the mixture and blend evenly.
- Spoon filling over crusts, smooth tops, and refrigerate at least 4 hours or overnight.
- Unmold, add toppings, and serve chilled.
