  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 1 tablespoon lemon juice (for a slight tang)
  • Pinch of salt
  • Fresh berries (like raspberries or strawberries)
  • Crushed candy canes
  • Chocolate drizzle
  • Mini chocolate chips or sprinkles
  • Crushed graham crackers or gingerbread crumbs

Instructions

  1. In a mixing bowl, combine the graham cracker crumbs, sugar, and cinnamon (if using). Add the melted butter and mix until the crumbs are evenly coated. Press the mixture into the bottom of mini muffin tins or silicone molds to form a crust. Press firmly to ensure the crust holds together.
  2. In a separate bowl, beat the softened cream cheese and powdered sugar together until smooth. Add the vanilla extract, lemon juice, and a pinch of salt. In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  3. Spoon or pipe the cheesecake filling onto the prepared crusts in the mini muffin tin or molds, smoothing the tops with a spatula. Tap the tin gently on the counter to remove any air bubbles.
  4. Cover the cheesecake bites with plastic wrap or foil and refrigerate for at least 2 hours or overnight to allow the filling to firm up.
  5. Before serving, add your desired toppings. You can use fresh berries, a sprinkle of crushed candy canes, a drizzle of chocolate, or anything else that fits your holiday theme.
