- 3 cups (360g) all-purpose flour or bread flour
- 1 1/2 teaspoons salt
- 1/2 teaspoon instant yeast
- 1 1/2 cups (360ml) warm water (about 100°F / 38°C)
- Optional: Extra flour for dusting
- Optional: Cornmeal or parchment paper
Instructions
- Combine flour, salt, and yeast in a large bowl. Stir in warm water until a shaggy, sticky dough forms. No kneading needed.
- Cover and let rest at room temperature for 12–18 hours until doubled, bubbly, and elastic.
- Lightly flour your surface, gently shape the dough into a round loaf, and let rest 30–60 minutes.
- Heat a Dutch oven with its lid inside a 450°F (230°C) oven for 30 minutes.
- Carefully place dough (on parchment) into the hot Dutch oven. Cover and bake 30 minutes; uncover and bake 10–15 minutes more until deep golden.
- Transfer loaf to a rack and cool at least 30 minutes before slicing.
