Ingredients

  • 1 cup brown sugar
  • 3 large eggs
  • 1 cup vegetable oil (or substitute half with applesauce)
  • 3 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 3 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups grated zucchini
  • 1 cup peeled and diced apple
  • 1 cup chopped walnuts

Instructions

  1. Prepare the pans: Grease two 8 x 4-inch loaf pans or six mini loaf pans. Preheat the oven to 325°F (163°C).
  2. Prep the fruits: Grate the zucchini and peel and dice the apple. Set aside.
  3. Mix dry ingredients: In a large bowl, combine flour, cinnamon, salt, baking powder, and baking soda.
  4. Mix wet ingredients: In a separate bowl, beat eggs, vegetable oil or applesauce, vanilla extract, white sugar, and brown sugar until blended.
  5. Combine wet and dry: Add wet ingredients to dry ingredients and stir until just combined.
  6. Add zucchini, apples, and nuts: Fold grated zucchini, diced apple, and chopped walnuts into the batter. Let sit for 5 minutes.
  7. Pour the batter: Divide evenly into prepared loaf pans.
  8. Bake: Bake mini loaves for 35-40 minutes, full-sized loaves for about 55 minutes.
  9. Test for doneness: Insert a toothpick into the center; if it comes out clean, the bread is ready.
  10. Cool: Let cool in pans for 20 minutes, then transfer to wire racks to cool completely before slicing.
