- 1/2 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 tsp salt
- 2 medium apples, peeled, cored, and finely chopped
- 1/2 cup brown sugar
- 1 tsp ground cinnamon
- 1/4 cup caramel sauce
- Powdered sugar for dusting
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a large bowl, cream the butter and granulated sugar until light and fluffy. Beat in the egg and vanilla.
- In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a small bowl, mix together the chopped apples, brown sugar, and cinnamon.
- Scoop rounded tablespoons of dough and flatten into disks. Place a heaping teaspoon of the apple mixture in the center of each disk. Fold the dough over the filling and pinch to seal.
- Place the filled cookies on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 18-20 minutes, until lightly golden brown. Allow to cool for 5 minutes, then drizzle with caramel sauce and dust with powdered sugar.
