Description

A classic homemade apple pie recipe with a flaky crust and sweet spiced apple filling. This easy apple pie from scratch is perfect for any occasion.

Ingredients

Scale
  • 1 recipe for pastry for double-crust pie
  • 6 cups thinly sliced peeled apples (about 6 medium apples)
  • 3/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 2 tablespoons butter, cut into small pieces
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon granulated sugar (for sprinkling)

Instructions

  1. Prepare your favorite double-crust pie pastry.
  2. In a large bowl, combine the sliced apples, 3/4 cup sugar, flour, cinnamon, nutmeg, and salt. Toss to coat the apples evenly. This is your classic apple pie filling.
  3. Stir in the lemon juice.
  4. Pour the apple mixture into the bottom pastry crust. Dot the top with the butter pieces.
  5. Place the top crust over the filling. Crimp the edges to seal and cut vents in the top crust. For a decorative touch, consider an apple pie with lattice crust.
  6. Brush the top crust with the beaten egg wash and sprinkle with 1 tablespoon of sugar.
  7. Bake in a preheated oven at 425°F (220°C) for 15 minutes.
  8. Reduce the oven temperature to 375°F (190°C) and continue baking for another 35-45 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, you can loosely tent it with foil.
  9. Let the apple pie cool on a wire rack for at least 2-3 hours before slicing and serving. This allows the filling to set properly, preventing a soggy bottom.

Notes

  • For the best results, use a mix of apple varieties like Granny Smith, Honeycrisp, or Fuji.
  • If you prefer a sweeter pie, you can increase the sugar slightly.
  • To prevent a soggy apple pie, ensure your crust is well-chilled and bake at the correct temperatures.
  • This recipe can be adapted for a Dutch apple pie by adding a streusel topping instead of a top crust.
