Description

This anti-inflammatory miso ginger broth with lemon is a nourishing and restorative soup that soothes the body and lifts the spirit.


Ingredients

  • 8 cups water
  • 1/4 cup white miso paste
  • 2 inches fresh ginger, peeled and sliced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons low-sodium soy sauce
  • 1 teaspoon honey (optional)
  • 1/2 teaspoon salt
  • 2 scallions, thinly sliced
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. In a large pot, bring the water to a boil over high heat.
  2. Reduce the heat to medium-low and whisk in the miso paste until dissolved.
  3. Add the sliced ginger and simmer for 15 minutes, allowing the flavors to infuse the broth.
  4. Remove the ginger slices and stir in the lemon juice, soy sauce, honey (if using), and salt.
  5. Ladle the broth into bowls and top with sliced scallions and chopped cilantro.
