- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar

Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
- Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, until the edges are lightly golden. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
