Description

Make delicate, crisp, and see-through almond lace cookies at home. These gluten-free cookies are perfect as a standalone treat or an elegant dessert garnish, with a wonderfully light texture that melts in your mouth.


Ingredients

  • ½ cup Unsalted Butter, melted
  • ½ cup Light Brown Sugar
  • ¼ cup Granulated Sugar
  • 1½ tbsp Milk
  • 1½ tsp Vanilla Extract
  • ½ tsp Salt
  • 1 cup Ground Almonds

Instructions

  1. Melt the butter in a small saucepan over low heat. Add the brown sugar, granulated sugar, and milk. Stir gently until the sugar has dissolved and the mixture is smooth.
  2. Remove the pan from the heat. Pour the mixture into a bowl and stir in the vanilla extract, salt, and ground almonds until well combined.
  3. Let the batter stand for about 10 minutes to allow it to thicken slightly.
  4. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  5. Use a teaspoon to scoop small amounts of batter and place them onto the prepared baking sheet, leaving at least 3 inches between each scoop.
  6. Bake for 6–8 minutes, or until the edges of the cookies are golden brown. Watch closely to prevent burning.
  7. Allow the cookies to cool completely on the baking sheet before transferring them, as they are fragile when hot.
  8. Enjoy these almond lace cookies plain, or make sandwich cookies with Nutella, melted chocolate, or your favorite jam.

  • Do not overbake; cookies will firm up and become crisp after cooling.
  • For variety, fill with strawberry jam or peanut butter.
