Ingredients

  • 12 pounds tri-tip roast
  • 2 tablespoons olive oil
  • 2 tablespoons steak seasoning of choice
  • 34 garlic cloves, crushed

Instructions

  1. Preheat air fryer to 400°F. Remove tri-tip from refrigerator 15 minutes before cooking to bring to room temperature.
  2. Pat tri-tip completely dry with paper towels. Rub olive oil all over the surface, then massage steak seasoning and crushed garlic into every surface.
  3. Place seasoned tri-tip in air fryer basket fat-side down. Cook for 12 minutes at 400°F without flipping.
  4. Carefully flip the tri-tip using tongs. Continue cooking for 10-15 minutes more until internal temperature reaches 125°F for medium-rare (130-135°F), 135-145°F for medium.
  5. Remove tri-tip when it reaches 5°F below target temperature. Tent with foil and rest for 10 minutes minimum.
  6. Slice against the grain at a 45-degree angle, about ¼-inch thick slices.

Notes

  • Use a meat thermometer for best results – pull at 125°F for medium-rare as it will coast to 130°F during resting
  • Room temperature meat cooks 25% more evenly than cold meat
  • Always slice against the grain for maximum tenderness
