  • 1/4 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 pound breakfast sausage or chorizo
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 2 cups shredded cheddar cheese
  • 12 whole wheat tortillas (large size)
  • Optional: salsa, sour cream for serving

Instructions

  1. In a large bowl, whisk together eggs, milk, salt, and pepper.
  2. Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned. Remove sausage and set aside, leaving grease in the skillet.
  3. Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  4. Return sausage to the skillet. Pour egg mixture over the sausage and vegetables. Cook, stirring occasionally, until eggs are set.
  5. Remove from heat and stir in shredded cheese until melted.
  6. Warm tortillas slightly to make them pliable.
  7. Spoon an equal amount of the egg mixture onto the center of each tortilla.
  8. Fold in the sides of each tortilla, then roll up tightly from the bottom to create a burrito.
  9. Wrap each breakfast burrito individually in plastic wrap or foil.
  10. Place wrapped burritos in a freezer-safe bag or container. Freeze for up to 3 months.
  11. To reheat, remove wrapping and microwave on high for 1-2 minutes, or until heated through.
