- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- Red and blue food coloring
- Patriotic sprinkles
Instructions
- Preheat oven to 350°F and line a 12-cup muffin tin with paper liners.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the vanilla.
- Alternate mixing in the flour mixture and milk in three additions, beginning and ending with the flour mixture. Mix just until combined.
- Divide the batter evenly among the prepared muffin cups, filling them about 3/4 full.
- Bake for 18-20 minutes, until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Make the frosting: In a large bowl, beat the softened butter until creamy. Gradually add in the powdered sugar and beat until smooth and fluffy.
- Divide the frosting into three bowls. Tint one portion red and one portion blue with food coloring.
- Pipe the colored frostings onto the cooled cupcakes in a swirled pattern. Top with patriotic sprinkles.
