  • 1 small red onion, cut into chunks
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 2 tablespoons grated Parmesan cheese (optional, for serving)

Instructions

  1. Slice chicken sausage into ½-inch rounds. Chop all vegetables into roughly equal-sized pieces (about 1-inch chunks) to ensure even cooking.
  2. In a large bowl, combine chicken sausage and all vegetables. Add olive oil and all seasonings, then toss until everything is evenly coated.
  3. Preheat your air fryer to 400°F (200°C) for 2-3 minutes. Add the sausage and vegetable mixture to the air fryer basket in a single layer.
  4. Air fry for 6-8 minutes, shaking the basket halfway through cooking time. The vegetables should be tender-crisp and the sausage should have nice browning on the edges.
